Beer Cheese Spread

 

2 cups grated cheddar cheese
1/2stick (1/4c)butter or margarine, softened
2 tsp. Dijon mustard
2 tsp. minced shallots, scallions, or onions
1/2 tsp. anchovy paste
1 tsp. caraway seed
Pinch of cayenne pepper or Tabasco
1/4 cup of beer

Combine all ingredients in food processor except beer. Gradually add beer and beat until mixture is fluffy. Store covered in fridge and bring to room temperature when you are ready to serve.
